Raj Kachori Recipe (Street Style)
🧂 Ingredients
For Kachori (Outer Shell):
- Maida – 1 cup
- Sooji (semolina) – 2 tbsp
- Baking soda – a pinch
- Salt – to taste
- Water – to knead (tight dough)
- Oil – for deep frying

For Filling:
- Boiled potatoes (mashed) – 2
- Boiled moong / white peas – ½ cup
- Boiled chickpeas – ½ cup
- Finely chopped onion – 1
- Salt & chaat masala – to taste

Chutneys & Toppings:
- Green chutney
- Sweet tamarind chutney
- Thick curd (whisked)
- Red chilli powder
- Roasted cumin powder
- Sev
- Coriander leaves
- Pomegranate seeds (optional)

👩🍳 Method
- Kachori banayein:
Maida, sooji, salt aur baking soda mix karein. Tight dough ghoondein.
Choti puri jaisi bel kar oil mein slow fry karein till puffed & crispy. Thanda hone dein. - Filling taiyar karein:
Potato, chana, matar, onion, salt aur chaat masala mix karein. - Assemble karein:
Kachori ke upar se hole karein.
Andar filling bharein → green chutney → meethi chutney → curd. - Final touch:
Upar se chilli powder, jeera powder, sev, coriander & anaar daalein.
