How to make paw bhaji?

For the Bhaji (Vegetable Curry):

  • 2 tbsp butter
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1 medium onion, finely chopped
  • 1½ tsp ginger-garlic paste
  • 2 medium tomatoes, finely chopped or pureed
  • ½ cup green peas (boiled or frozen)
  • 1 medium carrot, chopped
  • 1 cup cauliflower florets
  • 2 medium potatoes, boiled and mashed
  • 1 small capsicum (bell pepper), chopped
  • 2–3 tbsp pav bhaji masala
  • 1 tsp red chili powder (adjust to taste)
  • Salt, to taste
  • 1 tsp kasuri methi (optional, crushed)
  • Juice of ½ lemon
  • Fresh coriander leaves, chopped

🍳 Instructions:

1. Prep the Vegetables:

  • Boil potatoes, cauliflower, carrots, and green peas until soft. Mash roughly and keep aside.

2. Cook the Bhaji:

  1. Heat butter and oil in a pan. Add cumin seeds.
  2. Add onions and sauté until golden.
  3. Add ginger-garlic paste, cook for 1 minute.
  4. Add tomatoes and cook until mushy.
  5. Add capsicum and sauté for 2–3 minutes.
  6. Add pav bhaji masala, red chili powder, and salt.
  7. Add the boiled and mashed vegetables. Mix well.
  8. Use a potato masher to mash everything further in the pan.
  9. Add water as needed to adjust consistency (about 1–1½ cups).
  10. Let it simmer for 10–15 minutes. Add kasuri methi and lemon juice. Stir and taste for seasoning.

3. Toast the Pav:

  • Slice pav buns. Heat some butter on a tawa (flat pan), sprinkle a pinch of pav bhaji masala, and toast the buns until crisp and golden.
