  • A few cashews and raisins (optional, for richness)
  • Fresh coriander leaves (for garnish)

Step-by-Step Method

1. Wash and Soak the Rice

Wash the basmati rice 2–3 times until the water runs clear. Soak it in water for 20 minutes, then drain. This helps the rice cook evenly and stay fluffy.

2. Heat Oil or Ghee

Place a pan or pressure cooker on medium heat. Add oil or ghee. Once hot, add cumin seeds and let them crackle.

3. Add Whole Spices

Add bay leaf, cinnamon, cloves, and cardamom. Sauté for a few seconds until aromatic.

4. Sauté Onions

Add sliced onions and cook until they turn light golden brown. This step adds sweetness and depth to the pulaav.

5. Add Ginger-Garlic and Vegetables
