How to make Idli at Home?

Idli is one of the most popular and healthiest South Indian breakfast dishes. It is soft, steamed, oil-free, and easy to digest. Made mainly from rice and urad dal (black gram), idli is enjoyed across India and even internationally. Here is a simple step-by-step guide to making perfect idlis at home.


Ingredients Required

  • 2 cups idli rice or parboiled rice
  • 1 cup urad dal (split black gram)
  • Salt to taste
  • Water (as required)
  • Oil or ghee (for greasing idli moulds)

Step 1: Washing and Soaking

First, wash the rice and urad dal separately in clean water until the water runs clear.
Soak the rice in enough water for about 6–8 hours.
Soak the urad dal separately for 4–6 hours. Proper soaking helps in smooth grinding and good fermentation.


Step 2: Grinding the Batter

Drain the soaked urad dal and grind it to a smooth, fluffy paste using a grinder or mixer. Add water little by little while grinding.
Next, grind the soaked rice to a slightly coarse paste.
Mix both batters together in a large bowl. Add salt and mix well using your hand (this helps fermentation).


Step 3: Fermentation

Cover the batter and keep it in a warm place for 8–12 hours or overnight.
After fermentation, the batter will rise and become light and airy. This step is very important for soft idlis.

How to make idli with yeast

Step 4: Preparing the Idli Steamer

Grease the idli moulds lightly with oil or ghee.
Pour the fermented batter into each mould, filling it about three-fourths.

Step 5: Steaming the Idlis

Heat water in an idli steamer or pressure cooker (without whistle).
Place the idli stand inside and steam for 10–12 minutes on medium heat.
Check by inserting a toothpick—if it comes out clean, the idlis are done.

Step 6: Serving

Allow the idlis to cool slightly, then remove them using a spoon.
Serve hot idlis with coconut chutney, sambar, or podi (idli powder)

Tips for Perfect Idlis

  • Always use fresh urad dal for better fermentation.
  • Do not overmix the batter after fermentation.
  • If the weather is cold, keep the batter in a warm oven or wrap it in a cloth.
